Guest guest Posted June 6, 2000 Report Share Posted June 6, 2000 * Exported from MasterCook * Tofu Simmered in Hoisin Sauce Recipe By :This Can't Be TOFU! - Deborah Madison Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 carton firm or soft tofu (See Note) 5 teaspoons roasted peanut oil 1/3 cup hoisin sauce 1 tablespoon thin or light soy sauce 1 tablespoon rice wine or sherry 1 garlic clove -- minced 1/2 teaspoon freshly ground black pepper 1/2 cup water or vegetable stock 1 tablespoon black or white sesame seeds -- toasted in a small akillet 1 scallion, including 3 inches of the greens -- thinly sliced diagonally Drain the firm tofu, wrap it in a towel and press while you assemble the ingredients for the sauce. Slice it crosswise a scant 1/2 inch thick, then into triangles. Blot with paper toweling. Heat a nonstick skillet, brush with 2 teaspoons of the oil, then add the tofu. Fry over medium-high heat until golden, then turn, adding another 2 teaspoons oil, and brown the other side. Combine the hoisin sauce. soy sauce, rice wine, garlic, pepper, and remaining 1 teaspoon oil. Stir in the water or stock, then pour thhe mixture over the tofu and shuffle the pan back and forth to distribute it evenly. Cook over medium heat until bubbling and slightly reduced, about 2 minutes. Garnish with the sesame seeds and scallion. Note: Soft tofu packed in water has the nicest flavor and texture, both of which are more pronounced if the tofu isn't browned. If you enjoy the pure flavor of the soft tofu, heat the sauce with the tofu in it until it has been warmed through. If it reduces too much, simply add a little more water or stock to thin it out. Because hoisin sauce is usually rather sweet, dice the tofu very small and serve it as a sauce with rice, with stir-fried spinach, green beans, or broccoli on the side.
