Guest guest Posted June 6, 2000 Report Share Posted June 6, 2000 * Exported from MasterCook * Oven-Roasted Sweet Potatoes and Onions Recipe By : Cooking Light, April 1997, p.127 Serving Size : 6 Preparation Time :0:00 Categories : 1997 Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium sweet potatoes -- peeled & 2 " pieces 2 medium Vidalia onions -- peeled --cut into 1 " pieces 2 tablespoons extra virgin olive oil 3/4 teaspoon garlic-pepper blend (such as Lawry's) 1/2 teaspoon salt Preheat oven to 425. Combine all ingredients in a 13 × 9-inch baking dish, tossing to coat. Bake at 425 for 35 minutes or until tender, stirring occasionally. Serving Size: 1 cup. Yield: 6 cups.
