It's been nearly three years since I've had okra! It's occasionally sold as a

novelty item in the area of the country where I now live. And it's very

expensive, too. :-( This is quick and easy to make.

Amount Measure Ingredient -- Preparation Method

1/2 cup onion -- chopped

1 pound fresh okra

1 15-ounce can diced tomatoes

1 cup frozen corn

 

Saute onion in small amount of oil until opaque. Add remaining ingredients.

Cover and simmer until okra is tender.

 

Serve over rice.

A comment on the recipe I just sent -- the okra is sliced and not whole.

Also, look for small, tender okra. The larger ones aren't nearly as good.
