Deborah Madison, p106 Serving Size : 1 Preparation Time :0:00 Categories : Vegan Soyfoods Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package extra firm tofu -- or firm tofu 1/3 cup mild vinegar - or apple cider or white wine 1 tablespoon canola oil 4 large garlic cloves 1/2 teaspoon dried thyme 1 bay leaf 1 teaspoon ground cumin 1/2 teaspoon ground allspice 1/4 teaspoon black pepper 1/8 teaspoon ground cloves 1/2 teaspoon salt 1/2 teaspoon ground chipotle chile -- optional 1 tablespoon mild ground red chile 1 tablespoon paprika 1/2 cup chopped cilantro vegetable oil Makes about 1 1/2 cups. Crumble the tofu, wrap it in a dish towel, squeeze out the water, then turn it into a bowl. Combine the vinegar with the remaining ingredients in a small food processor or blender.Puree until smooth, then pour over the tofu and toss well. Taste for salt and pepper. When hot, add the " sausage " and cook over medium-high heat, turning frequently, until heated through and browning in places. Add the cilantro, scallion, and a few pinches of salt to the eggs. Pour them into the pan, add the cheese, and cook, stirring slowly but continually, until the eggs are set. Meanwhile, warm the tortillas in a second skillet or on an asador, a stove top grill that sits over the burner. Turn them so that both sides are hot.
