Guest guest Posted June 4, 2000 Report Share Posted June 4, 2000 * Exported from MasterCook * Horseradish Aioli Recipe By :Mollie Katzen Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ozs silken tofu (soft variety) 1 med garlic clove 2 tsps prepared horseradish 1/2 tsp salt -- rounded measure 2 tbsps fresh lemon juice 1 tbsp olive oil 1/2 c mayonnaise (regular or lowfat) -- up to 1/2 cup, commercial Place everything except the optional mayonnaise in a blender and whip until smooth. Transfer to a bowl, and whisk in the mayonnaise, if desired. Cover tightly and refrigerated until use. Yield: 1 1/2 to 2 cups Preparation time: 10 minutes or less Serve Horseradish Aioli with raw or steamed vegetables, asa garnish for soups, on top of cooked beans, steamed greens, pasta, or rice, spread onto crackers or sandwiches, with cooked fish...many etceteras. It is especially good with Vegetarian Salade Nicoise (p 15). This sauce keeps for several weeks if stored in a tightly covered container in the refrigerator. Whipped silken tofu, the ultrasmooth kind that comes in little vacuum-packed boxes, does the best mayonnaise impersonation this side of Provence, bringing the fat and cholesterol content way down and the protein component way up in the process. Horseradish, garlic, and lemon spike the tofu with a perfect zip. Adding some real mayonnaise to this sauce gives it some extra richness. But it's not necessary - the Aioli tastes great either way.
