Grilled papaya slices (perfectly - but not too- ripe), with slices of roasted red pepper, eggplant, and onion (pages 96 and 98), a few fresh basil leaves, and grated mozzarella cheese on toasted sourdough. Horseradish Aioli (page 168) with slices of green apple and Pickled Red Onions (page 63) on toasted pumpernickel with thin slices of gruyere melted over the top, and radish sprouts for a garnish. Chimichurri (Page 165) on rye bread with slices of Fuji apple, and cheddar cheese melted over the top. Arugula and thinly sliced pears on toasted walnut bread with crumbled blue cheese. All different kinda of Roasted Vegetables (pgs 96 to 99) on toasted baguettes, with Horseradish Aioli (pg 168), with or without melted cheese. Chimichurri (p 165) with plain egg salad. Red Onion and Shallot Marmalade (Pg 162) with cheese or savory baked tofu. Tapenade (p 161) with sliced egg, mayonnaise, tomato and fresh spinach. Frittata (p 124). Gremolata-Ricotta Egg Salad (p 10) with tomatoes, olives and julienned cooked beets. GuacaMollie (p 158) in pita bread with chips on the side. Chickpea and Sweet Potato Koftas (p 79) and Mediterranean Yogurt (p 169) with diced tomatoes in pita bread. Mini-recipe: Marinate slices of firm tofu in soy sauce, ginger and garlic, then saute them in butter or oil on both sides for about 5 minutes. Spread the bread of your choice with mustard and Summer Fruit Salsa (p 157), and place the tofu slices on top. Serve open-faced or closed.
