Since I used up leftovers tonight, and I didn't do

anything special with them, I decided to make something

to go with them. I had picked up a beautiful avocado at

the supermarket yesterday and some poblanos, so I decided

to make some guacamole. I adapted a recipe I found in a

book and this is what I came up with. It came out

delicious - DH ate almost all of it.

Guacamole

Amount Measure Ingredient -- Preparation Method

1/4 onion -- finely chopped

1 stemmed jalapeno chile -- seeded

& minced

1 tsp cilantro -- finely chopped

1/8 tsp kosher salt

1 med avocado

1 sm tomato -- seeded & chopped

1/8 cup onion -- chopped

2 tsp cilantro -- finely chopped

1 tsp lime juice

2 lg flour tortillas -- heated through

Garnish:

sour cream -- or fat free

scallions -- chopped

cilantro -- chopped

salsa

 

Using a food processor, grind together the onions,

jalapeno, poblano, cilantro and salt and pulse until it

resembles a paste, then set aside.

 

Cut the avocado in half, remove the seed, and scoop out

the flesh in a separate bowl. Add the chile paste to the

avocado and mash with a fork. Add the tomato, onion,

cilantro, and lime juice, mixing to a thick, smooth

consistency.

 

Heat 2 large flour tortillas in a pan until warmed

through and very pliable. Cut into quarters.

 

To serve: Spoon some guacamole into one of the tortilla

quarters, dollop with sour cream, salsa, or some chopped

cilantro or scallion.
