Pie Shell

1 1/4 cups graham cracker crumbs

1/4 cup ground almonds

1/4 cup shredded coconut

1/3 cup maple syrup

1/4 cup carob powder

1/4 cup whole wheat flour

1 tablespoon canola oil

Filling

1 pound firm tofu

1/2 cup granulated sugar

1/4 cup maple syrup

2 teaspoons vanilla

3/4 cup chocolate chips (dairy-free variety)

 

In a bowl, combine graham crumbs, almonds, coconut, maple syrup, carob powder,

whole wheat flour, and oil; mix to form a thick dough.

 

With wet fingers, press dough onto 9-inch nonstick pie plate, lightly greased.

(The crust should be thick.) Bake in preheated 350F oven for 15 minutes. Set

aside to cool. Increase oven temperature to 350F.

 

Make the filling: In a food processor, blend tofu, sugar, maple syrup, and

vanilla to a fine and creamy texture. Transfer to a bowl. Stir in chocolate

chips. Pour mixture into prepared pie shell and bake 35 to 40 minutes. Let

cool. Refrigerate 1 hour before serving.
