Gingerbread

Amount Measure Ingredient -- Preparation Method

1 cup unbleached flour

3/4 cup whole wheat pastry flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground ginger

1/2 teaspoon ground cinnamon

1/4 teaspoon mustard powder

egg replacer to equal one egg

1 cup apple juice -- or cider

1/3 cup dark molasses

1 cup shredded carrots

 

In a large bowl, mix the unbleached flour, whole wheat flour, baking powder,

baking soda, ginger, cinnamon, and mustard powder till well blended.

 

In a medium bowl, whisk together the egg, juice, and molasses. Stir in the

carrots.

 

Pour the liquid ingredients into the flour bowl. Stir to blend but do not

overmix.

 

Coat an 8x4-inch loaf pan with non-stick spray. Add the batter. Bake at 350

degrees for 40 to 45 minutes, or until a toothpick inserted in the center comes

out clean. Unmold onto a wire rack and let cool.
