Guest guest Posted May 31, 2000 Report Share Posted May 31, 2000 I always use black barley- * Exported from MasterCook * Hearty Barley Stew Recipe By :Alex and Gale Jack - Amber Waves of Grain Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup barley 1 medium onion -- diced 1 medium carrot -- diced 1 to 2 cups buttercup squash -- cut into small chunks 1 handful green beans (optional) -- thinly sliced 3 to4 cups spring water Wash and cut vegetables, setting aside in separate bowls. Wash barley. Layer in a sturdy pot with a lid the onions, carrots, squash, and barley. Add water by gently pouring into the pot along the side. Reduce flame and cook untill barley is almost done. Then add the slivered green beans and a pinch of sea salt. Cook for another 10 minutes.
