Guest guest Posted May 31, 2000 Report Share Posted May 31, 2000 This sounds like winter, too. * Exported from MasterCook * Aveline Kushi's Soybean Stew Recipe By :Alex and Gale Jack - Amber Waves of Grain Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup soybeans -- soaked 1 3-inch piece kombu 1 onion -- diced 2 squares dried tofu -- pre-soaked in 1/2 cup water and 1/2 cup shoyu 1 carrot -- diced 2 1/2 to 3 cups spring water 1 teaspoon miso Soak soybeans for 6 hours. Dice onions, dried tofu, and carrots. Layer kombu, onions, tofu, and carrots in pressure cooker. Bring to pressure and cook for 30 to 40 minutes. Let pressure down, add sea salt, and simmer for 10 more minutes. Add pureed miso and simmer gently for several more minutes. ***This is as the recipe appears in the book - I assume you would add the soaked soybeans as a first layer when layering the ingredients.
