Faux French Fries

1 small butternut or acorn squash

2 medium sweet potatoes

vegetable oil

 

Peel vegetables and slice them into the shape of oversized french fries, about 1

inch thick. Preheat oven to 400F and lightly oil 2 nonstick baking sheets.

Place each type of fries in single layer on separate prepared baking sheet.

Bake for 25 to 30 minutes, turn, then bake another 25 to 30 minutes or until

edges become browned. Check for doneness; if you like your chips crispier,

increase the baking time accordingly.
