Guest guest Posted May 29, 2000 Report Share Posted May 29, 2000 * Exported from MasterCook * Celebration Rice Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Low fat Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup brown rice 1/4 cup wild rice 2 cups water 1/3 cup orange juice 1 tablespoon soy sauce, low sodium 1 1/2 teaspoons olive oil 1 teaspoon grated orange rind 1 teaspoon curry powder 1 tablespoon toasted sesame seeds 2 tablespoons chopped chives -- or scallions 2 tablespoons chopped red bell peppers In a 2-quart saucepan over medium heat, stir the brown rice and the wild rice until lightly toasted, about 5 minutes. Add the water, orange juice, soy sauce, oil, orange rind, and curry powder. Cover the pan tightly and cook over low heat for 45 to 50 minutes, or until all the liquid has been absorbed and the rice is tender. Fluff the rice with a fork. Stir in the sesame seeds, chopped chives or scallions, and peppers.
