Guest guest Posted May 29, 2000 Report Share Posted May 29, 2000 * Exported from MasterCook * Chickpea Salad Recipe By :The Teen's Vegetarian Cookbook, Judy Krizmanic Serving Size : 4 Preparation Time :0:00 Categories : The Teen's Vegetarian Cookbook Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 15 oz can chickpeas -- drained & rinsed 1/3 cup tofu mayonnaise -- (to 1/2 cup) store-bought or homemade 1 1/2 stalks celery -- cut into small pieces 1/2 teaspoon onion powder 1/2 teaspoon garlic powder salt & pepper to taste In a bowl, mash chickpeas with a potato masher or fork. They don't have to be super-smooth; some chunks are fine. Stir in remaining ingredients until well combined. Makes enough salad for 4 sandwiches, and keeps in the refrigerator for several days.
