Marinated Grilled Vegetables

10 large fresh mushrooms

2 zucchini

2 yellow squash

1 green bell pepper

1 red bell pepper

1/2 cup balsamic vinegar

2 tablespoons olive oil

3 cloves garlic -- miniced

1/2 teaspoon salt

1 teaspoon minced fresh thyme

1 teaspoon freshly ground black pepper

vegetable cooking spray

 

Remove mushroom stems and discard. Cut zucchini and yellow squash into 1/2 "

thick slices. Cut bell peppers into 1-inch strips.

 

Combine vegetables, vinegar, and next 5 ingredients in a large heavy-duty

zip-top plastic bag; seal and chill 30 minutes. Remove vegetables with a

slotted spoon, reserving marinade.

 

Coat a grill wok with cooking spray; arrange vegetables in basket. Grill,

covered with grill lid, over medium heat (300º to 350ºF) 12 minutes on each side

or until vegetables are crisp-tender.

 

Place vegetables in a large bowl. Drizzle with reserved marinade, tossing to

coat.
