Fire up grill. Trim squash ends. Cut into thick horizontal slices. Rub squash and pepper halves with 2 teaspoons of olive oil. Grill them until al dente, about 3-4 minutes on each side. Cut into bite size pieces and set aside. Wrap tortillas in plastic wrap or place on a plate and cover with a damp paper towel, microwave on high 30-45 seconds. Place a tortilla on a flat work surface. Spread 1 ounce of goat cheese on the outer edge closest to you. Lay 1/2 cup grilled vegetables in a line on the cheese, leaving a margin on one side. Lay 1/4 cup salsa next to the vegetables. Drizzle with 1 teaspoon of olive oil. Fold the side with the margin toward the center and roll the whole thing up burrito-style.
