Grilled Vegetable Wraps

1 cup Tomato-Cucumber Salsa -- (recipe follows)

1 medium yellow squash, cut into thick slices

1 large zucchini, cut into thick slices

1 medium red bell pepper -- halved

2 tablespoons olive oil, divided

4 large flour tortillas

4 ounces goat cheese (or other cheese of choice) -- room

temperature

 

Make salsa and set aside. Fire up grill. Trim squash ends. Cut into

thick horizontal slices. Rub squash and pepper halves with 2 teaspoons of olive

oil. Grill them until al dente, about 3-4 minutes on each side. Cut into bite

size pieces and set aside.

Wrap tortillas in plastic wrap or place on a plate and cover with a damp

paper towel, microwave on high 30-45 seconds. Place a tortilla on a flat work

surface.

Spread 1 ounce of goat cheese on the outer edge closest to you. Lay 1/2

cup grilled vegetables in a line on the cheese, leaving a margin on one side.

Lay 1/4 cup salsa next to the vegetables. Drizzle with 1 teaspoon of olive oil.

Fold the side with the margin toward the center and roll the whole thing up

burrito-style. Repeat with remaining ingredients.

2 roma tomatoes -- finely diced

1/2 cucumber, seeded, peeled, and -- finely diced

1/2 medium onion -- finely diced

2 tbsp. minced mint leaves -- (2 to 3)

1 jalapeno pepper -- minced

2 tablespoons lemon juice

salt to taste

 

In a small bowl, combine tomatoes, cucumber, onion, mint leaves, and jalapeno.

Toss with lemon juice and salt.
