Guest guest Posted May 26, 2000 Report Share Posted May 26, 2000 * Exported from MasterCook * Creamy Split Pea Soup Recipe By : BH & G Low-Fat & Luscious Vegetarian, page 69 Serving Size : 4 Preparation Time :0:00 Categories : Beans And Legumes Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups dry split peas 5 cups water 1 cup chopped onions 1 teaspoon dried marjoram -- crushed 1/2 teaspoon salt 1/8 teaspoon pepper 1 bay leaf 1 cup thinly sliced carrots 1 tablespoon all-purpose flour 1/2 cup light dairy sour cream 1 cup skim milk Stir a small amount of light dairy sour cream into ordinary pea soup to boost the flavor. Although it tastes rich and flavorful, you won't have to worry a bit with a mere 3 grams of fat per serving. Rinse the split peas. In a large saucepan combine the split peas, water, onions, marjoram, salt, pepper, and bay leaf. Bring to boiling; reduce heat. Simmer, covered, for 1 hour. Stir in carrots. Return to boiling; reduce heat. Simmer, covered, about 20 minutes more or until split peas and carrots are tender. Discard bay leaf In a small bowl stir flour into sour cream. Stir sour cream mixture and milk into split pea Mixture. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Ladle soup into bowls. Serve immediately. Makes 4 main-dish servings. Preparation time: 20 minutes. Cooking time: 1 hour 20 minutes. 307 Calories; 3 G Total fat; 1 G Saturated fat; 5 MG Cholesterol; 374 MG Sodium; 52 G Carbohydrate; 4 G Fiber; 20 G Protein.
