Fruits of the Harvest Pasta

Amount Measure Ingredient -- Preparation Method

12 manicotti -- (12-14 shells)

1 10-ounce package frozen chopped spinach -- thawed and drained

1 16-ounce can pinto beans

1 can Italian-style stewed tomatoes -- (14 1/2 ounces)

3/4 cup chopped onions

1/2 cup chopped red bell pepper

2 cups cooked brown rice

1/2 cup salsa -- (medium spicy)

black pepper and garlic salt -- to taste

1 26-ounce jar light spaghetti sauce with mushrooms

1/4 cup minced parsley -- for garnish (optional)

 

Boil manicotti shells in water for 8 minutes. Drain and cool. Combine spinach,

beans, tomatoes, onions, red pepper, brown rice, salsa, black pepper, and garlic

salt.

 

Spread about 1 cup of the spaghetti sauce in the bottom of a large casserole (or

two smaller 9x13-inch ones). Split the manicotti open lengthwise, place on top

of sauce, and abundantly fill with bean mixture; fold up the sides and place

tightly together in the dish. Cover with the remaining sauce. Bake, covered,

for 20 minutes at 350 degrees, remove the top, and bake an additional 10

minutes, or until piping hot. Add parsley before serving.

fat, high in fiber, and easy to make. If you are not having a crowd, divide the

recipe and freeze half.
