Guest guest Posted May 25, 2000 Report Share Posted May 25, 2000 * Exported from MasterCook * Split Pea Tacos Recipe By :B H & G Low Fat & Luscious Vegetarian Serving Size : 4 Preparation Time :0:00 Categories : BH & G Low Fat Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup dry yellow or green split beas 2 1/2 cups water 1 medium onion -- chopped 2 cloves garlic -- minced 1 4 oz can diced green chiles -- rinsed & drained 1 teaspoon chili powder -- (to 2 tsp) 8 taco shells OR 4 9-10 inch flour tortillas 1 cup shredded lettuce 3/4 cup chopped tomato 1/2 cup shredded reduced-fat cheddar or mozzarella cheese -- (2 oz) salsa or taco sauce -- (optional) For filling, rinse the split peas. In a medium saucepan combine the split peas, water, onion, garlic, green chiles, and chili powder. Bring to boiling; reduce heat. Simmer, covered, about 50 minutes or until split peas are tender. Meanwhile, heat the taco shells (if using) according to package directions. Spoon filling into shells. Top with lettuce, tomato, and cheese. Or, if using flour tortillas, wrap in foil. Heat in a 350ºF oven for 10 minutes to soften. Spoon about 2/3 cup of filling onto each tortilla along center. Top with lettuce, tomato, and cheese. Fold bottom edge of each tortilla up over filling. Fold opposite sides in just to enclose filling. Roll up from the bottom. If desired, serve with salsa or taco sauce.
