Mostaccioli with Herbed Lentil Sauce

3/4 cup lentils -- (see note)

2 1/2 cups vegetable juice

1 cup water

1 large onion -- thinly sliced, and separated into rings

1 stalk celery -- thinly sliced (1/2 cup)

3 tablespoons fresh basil -- snipped, or 1 1/2 tsp. dried basil

2 teaspoons sugar

2 bay leaves

1/4 teaspoon hot pepper sauce

8 ounces mostaccioli -- or penne (dry)

Soy parmesan cheese -- (optional)

 

Rinse lentils. In a large saucepan combine the lentils, vegetable juice, water,

onion, celery, basil, sugar, bay leaves, and hot pepper sauce. Bring to

boiling; reduce heat. Simmer, covered, about 45 minutes* or until lentils are

tender. Discard bay leaves.

 

Meanwhile, cook mostaccioli or penne according to package directions. Drain and

keep warm.

 

To serve, spoon lentil mixture over cooked pasta. If desired, sprinkle with

(soy) Parmesan cheese.

NOTES : *Regular brown lentils (sometimes called " green " ), which are the lentils

most commonly found in supermarkets, have their outer seed coat intact. Red and

yellow lentils have had the seed coat removed and are found in specialty stores

such as Middle Eastern or East Indian markets. You can use the red or yellow

varieties here; however, they cook faster. Therefore, allow only about 25

minutes cooking time. You also may need to cook the sauce, uncovered, for 5

minutes more to reach the desired consistency.
