Delicious Calcium-Rich Dairy-Free Vegetarian Recipes Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 tablespoon olive oil 2 medium onions -- chopped 1 cup cooked navy beans OR 1 14 oz can -- rinsed and drained 1 1/2 cups cooked white or black beans OR 1 14 oz can -- rinsed and drained 3 medium apples -- peeled, cored, and finely chopped 8 ounces firm tofu -- cut into small cubes 1/4 cup ketchup 1/4 cup blackstrap molasses 1/4 cup tomato paste 1 tablespoon dry mustard 1/2 teaspoon cumin In a large nonstick saucepan, heat oil over medium heat. Add onions. Saute for 5 minutes or until softened. Add beans, apples, tofu, kethup, molasses, tomato paste, mustard, and cumin. Reduce heat to low and simmer uncovered, for 20 minutes. Stir occasionally. Serve hot. Tip: Try this dish with a baked potato! Pierce with fork, wrap in foil then bake potato in a preheated 425F oven for 50 to 60 minutes or until soft. Slice off top then hollow out with a spoon, leaving a thickness of 1/4 inch. Stuff with baked beans and serve hot.
