Delicious Calcium-Rich Dairy-Free Vegetarian Recipes Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ounces extra-firm tofu 1/2 cup soy milk (calcium fortified) 1/2 cup chopped peeled orange segments 1/2 teaspoon vanilla 1/2 teaspoon almond extract 3/4 cup amaranth flour or soy flour 3/4 cup whole wheat flour 1 1/4 cups brown sugar 1 teaspoon cinnamon 1 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt 3 kiwi fruits -- peeled and finely chopped 1/4 cup finely chopped almonds 1/2 cup chocolate chips (dairy-free variety) 1/2 cup carob chips In a large bowl with an electric mixer (or in a food processor or blender), combine tofu, soy milk, orange segments, vanilla, and almond extract; blend until smooth. In a separate bowl, stir together amaranth flour, whole wheat flour, sugar, cinnamon, baking soda, baking powder, and salt. Mix well. Gradually stir dry ingredients into tofu mixture; blend until well mixed. Stir in kiwi, almonds, chocolate and carob chips. Pour batter into well greased 9-inch baking pan. Bake 1 hour in preheated 350F oven.
