Layered Mashed Potatoes

6 medium white potatoes -- peeled and quartered

1/4 cup soy milk (calcium fortified)

3 medium-large sweet potatoes -- peeled and quartered

2 teaspoons olive oil

1 large onion -- finely chopped

4 cups packed finely chopped collard greens -- steamed

1 teaspoon salt

3 cups packed finely chopped Chinese lettuce -- steamed

1/4 cup finely chopped fresh whole fennel

In a large pot of boiling water, cook white potayoes until soft; drain and

transfer to a large bowl. Mash potatoes with soy milk and set aside.

 

In another pot of boiling water, cook sweet potatoes until soft; drain and

transfer to another large bowl. Mash and set aside.

 

In a nonstick skillet, heat oil over medium-high heat. Add onion and saute

until browned. Add to mashed white potato, along with collards and salt. Mix

well.

 

Add Chinese lettuce and fennel to sweet potatoes,; mix well.

 

Make a 1-inch layer of white potato mixture in 11 x 9-inch prepared baking dish.

Follow with a layer of sweet potato mixture. Finish with white potato layer.

Bake in 350F preheated oven for 30 minutes.

 

Sprinkle cilantro over top. Cut into large squares and serve hot.
