Delicious Calcium-Rich Dairy-Free Vegetarian Recipes - David and Rachelle Bronfman Serving Size : 3 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 medium potatoes -- peeled and quartered 2 teaspoons olive oil 2 cups cooked white beans OR 1 19 oz can white beans -- rinsed and drained 1/4 cup water 3 cloves garlic -- minced 3/4 teaspoon salt 1/4 teaspoon black pepper Boil potatoes for 15 minutes or until soft. Drain. In a bowl, mash potatoes with oil. In a food processor, puree beans, water, garlic, salt, and pepper to form a thick paste. Transfer mixture to mashed potatoes in bowl; mix until well combined.
