Delicious Calcium-Rich Dairy-Free Vegetarian Recipes - David and Rachelle Bronfman Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup any store-bought marinade (try barbecue sauce, hickory-smoked barbecue sauce, sweet and sour sauce, soy sauce, curry sauce, or any of your favorite sauces 8 ounces firm tofu or extra-firm tofu -- cut into 1/4 " cubes 1 cup quinoa -- cooked Place marinade in a bowl. Add tofu cubes and toss to coat. Cover and refrigerate for 2 hours to allow tofu to absorb flavors. Transfer tofu to 11 x 9-inch baking dish. Bake in preheated 350F oven for 12 to 15 minutes. Pour quinoa on top of cooked tofu and mix together.
