Guest guest Posted May 23, 2000 Report Share Posted May 23, 2000 * Exported from MasterCook * Breakfast Couscous with Fruit Recipe By :B H & G Low Fat & Luscious Vegetarian Serving Size : 4 Preparation Time :0:00 Categories : BH & G Low Fat Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup rice milk OR skim milk 1/4 teaspoon ground cinnamon dash ground nutmeg 1 cup couscous 1/3 cup orange juice 3/4 cup cranberries 2 tablespoons water 2 tablespoons honey 1 11 oz can mandarin orange sections -- drained 2 tablespoons toasted slivered almonds In a medium saucepan, combine rice milk or milk, cinnamon, and nutmeg. Bring to boiling over medium heat. Add couscous. Cover and remove from heat. Let stand for 5 minutes. Stir in orange juice. Fluff with a fork. Meanwhile, in a small saucepan, combine cranberries, water, and honey. Cook over low heat for 4 to 5 minutes or until the cranberry skins begin to pop. Remove from heat. Gently stir in mandarin oranges. To serve, spoon couscous mixture into serving bowls. Top with warm cranberry-orange mixture and sprinkle with almonds.
