EARL GREY TEA PRUNE LOAF

Amount Measure Ingredient -- Preparation Method

-- 1 1/2 LB LOAF--

3/4 cup tea, brewed -- earl grey - strong

4 egg whites

1/4 cup sugar

3/4 teaspoon salt

1 cup oatmeal

2 cups bread flour

2 1/2 teaspoons yeast

2/3 cup prunes -- pitted and chopped

 

Soak the prunes in the tea for at least one hour. Drain the prunes and add tea

to the bread. Add the rest of the ingredients except for the prunes. Bake

according to manufacturer's instructions, adding the reserved prunes during the

raisin bread cycle, or five minutes before the final kneading is finished.

 

 

AUTHOR'S NOTE: This is a high rising, succulent loaf with plump prunes strewn

thoughout. The earl grey tea adds a subtle smokey background to the sweet

fruit, and should be brewed doubly strong. I use 2 tea bags to make my cup.

 

JENN'S LOWER FAT NOTES: Use 4 eggwhites or 1/2 cup egg beaters instead of eggs.

This won't lower the points but will lower the grams of fat.
