CINNAMON RAISIN BREAD

Amount Measure Ingredient -- Preparation Method

-- 1 1/2 LB LOAF--

1 cup skim milk

3 egg whites

4 tablespoons unsweetened applesauce

1/4 cup honey

1 1/2 teaspoons cinnamon

1 1/3 teaspoons salt

3 1/2 cups bread flour

2 1/2 teaspoons yeast

2/3 cup raisins

 

Bake according to manufacturer's instructions, adding the raisins during the

raisin bread cycle, or five minutes before the final kneading is finished.

 

AUTHOR'S NOTE: One of my favorite standards, I often serve this bread for brunch

with orange butter and omelets. Everyone always wants the recipe.

 

JENN'S LOWER FAT NOTES: Use 3 egg whites or 1/3 cup egg beaters instead of eggs,

use applesauce instead of butter.
