Very Veggie Minestone

1 tablespoon olive oil

1/2 cup finely chopped onion

1/2 cup chopped celery

2 cups cooked white, black, or pinto beans

OR

1 19 oz can beans -- rinsed and drained

4 cups vegetable stock

3 cups chopped fresh tomatoes

2 cups packed finely chopped beet greens

1 cup halved green beans

1/2 teaspoon dried ground rosemary

1 cup chopped fresh okra

1/4 teaspoon salt

black pepper, to taste

 

In a large pot with a lid, heat oil over medium-high heat. Add onions and

celery; saute for 5 minutes.

 

Stir in beans, stock, tomatoes, beet greens, green beans, and rosemary. Bring

to a boil. Reduce heat, cover and simmer 15 minutes, stirring occasionally.

 

Add okra, salt, and pepper; simmer, covered, an additional 10 minutes before

serving.
