Guest guest Posted May 19, 2000 Report Share Posted May 19, 2000 Here's a good, fast recipe which I adapted slightly by adding the nutritional yeast for a cheesy flavor. * Exported from MasterCook * Hearty Macaroni Dinner Recipe By :Debra Wasserman Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes Pasta Quick And Easy Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups elbow macaroni 4 cups water 1 onion -- chopped 2 tablespoons oil 3 cups tomato juice -- (or 1 15-oz. can tomato sauce and one cup water) 4 teaspoons chili powder salt and pepper -- to taste 1 box frozen corn -- (10 ounce) 1 can kidney beans -- (19 ounce) drained 1 tbsp. nutritional yeast -- (optional but gives a great flavor) Cook pasta in water until tender. Drain. Saute onion in oil in a large pot. Add remaining ingredients, as well as cooked pasta. Simmer 15 minutes, stirring occasionally. Even meat eaters like this one, and it's very hearty. Use up to 3 tablespoons of nutritional yeast for a richer, cheesy taste. Nutr.
