Spicy Tofu Burritos

4 whole wheat flour tortillas -- (10-inch)

2 tablespoons olive oil

1 cup onion -- chopped

1 tablespoon cumin

1 teaspoon turmeric

8 ounces extra firm tofu -- crumbled

1/2 cup roasted red pepper strips

2 tablespoons sambal oelek -- (oriental red

-- pepper paste)

1 tablespoon garlic -- minced

3 ounces mozzarella cheese -- shredded

1 cup lettuce -- shredded

6 tablespoons cilantro -- chopped

4 tablespoons lime juice

-- salt and pepper to

-- taste

 

Warm tortillas in moderate oven.

 

Heat olive oil in wok. Saute' onion until golden. Add cumin and tumeric.

Stir. Add tofu, roasted red pepper and garlic. Saute' until heated

through. Add cheese and stir until melted. Season with salt and pepper.

Spoon 4 ounces of tofu mixture down center of each tortilla. Top with

lettuce and cilantro and drizzle with lime juice. Wrap tortilla around

filling and serve.

80 to 160 calories. Corn tortillas are made from a very finely ground

and specially-prepared corn. They are usually about 6 inches in diameter

and have a coarse texture. They have about 45 to 70 calories.
