Basmati Rice With Peas (Quick And Easy Version)

1 cup brown basmati rice

2 cups water

1/8 teaspoon sea salt

1/4 teaspoon ground cumin

1 bay leaf

1/2 cup frozen peas

 

between 30 and 60 minutes

 

1. Place rice in a bowl. Add water to cover and let sit for 10

minutes. Drain and rinse.

 

2. In a saucepan, combine rice and water. Stir in salt, cumin and bay

leaf. Bring to a boil; reduce heat to low, cover and simmer for 30

minutes. Stir in peas and cook for 5 minutes longer.

 

3. Remove bay leaf. Fluff rice with a fork and serve hot.

 

Yield: 4 SERVINGS

***CROUTONS***

cooking spray

preferably garlic-flavored

1 cup bread cubes -- (3 oz)

(from French or Italian bread)

2 teaspoons chopped fresh basil

OR 1 teaspoon dried

1 teaspoon chopped fresh rosemary -- optional

1 teaspoon chopped fresh parsley

1/4 teaspoon granulated garlic

***DRESSING***

2 ounces low-fat silken tofu -- (60 g)

3 tablespoons water

2 tablespoons fresh lemon juice

1 1/2 teaspoons white miso paste

1 teaspoon Dijon mustard

1 1/2 tablespoons Parmesan-style soy cheese

1 teaspoon minced fresh garlic

1/2 teaspoon granulated onion

1 dash Worcestershire sauce

cracked black pepper to taste

***SALAD***

1 head romaine lettuce -- washed

and torn into bite-size pieces

1 tablespoon Parmesan-style soy cheese

 

under 30 minutes

 

TO MAKE CROUTONS

 

1.Preheat oven to 350ºF (175ºC). Lightly spray a baking sheet with cooking

spray.

 

2.In a bowl, toss bread cubes with herbs and garlic. Spread on baking sheet.

 

3.Bake croutons until light brown, about 20 minutes.

 

TO MAKE DRESSING

 

1.Puree all ingredients in a food processor or blender until smooth.

 

TO ASSEMBLE SALAD

 

1.In a salad bowl, toss lettuce, croutons and dressing. Sprinkle with soy

cheese and serve.

 

Yield: 4 SERVINGS
