I'm thinking that I must've sent LOTS of recipes with blank lines so MC didn't

export the entire recipe - if anyone knows of some, let me know and I'll resend.

Mushroom Stroganoff

1 1/2 cups boiling water

1 cup textured soy protein chunks

2 tablespoons ketchup

1 cup thinly sliced onions

2 tablespoons margarine

1 cup sliced mushrooms

Sauce:

1 tablespoon margarine

1 tablespoon unbleached white flour

1 cup vegetable stock

1 tablespoon ketchup

2 tablespoons Mock Sour Cream

salt, to taste

 

Pour the boiling water oved the textred soy chunks in a saucepan, and mix in the

2 tablespoons ketchup. Let stand for 10 minutes, then cover and simmer for 20

minutes.

 

Meanwhile, slowly saute the onions in the 2 tablespoons margarine over low heat

for 15 minutes, then add the mushrooms, and cook a few minutes more.

 

To make the sauce, melt the 1 tablespoon margarine in a small saucepan, and stir

in the flour. Cook a minute or two, then gradually stir in the vegetable stock,

and cook until bubbly. Remove from heat, and stir in the 1 tablespoon ketchup

and the sour cream. Add salt to taste.

 

Add the cooked, drained soy chunks and the mushrooms and onions to the sauce.

Serve over noodles or rice.
