Chunky Corn Chowder

4 cups chopped peeled sweet potatoes

4 cups vegetable stock

2 small onions -- chopped

2 cups corn kernels -- drained

2 cups chopped packed Chinese lettuce

3 stalks celery -- chopped

3 tomatoes -- peeled and chopped

1 teaspoon salt

1 cup okra -- cut into rounds 1/4 inch thick

1 cup packed finely chopped collard greens

1 cup soy milk (calcium fortified)

 

In a large pot with a lid, combine sweet potatoes, stock, onins, corn, Chinese

lettuce, celery, tomatoes, and salt. Cover and bring to a boil. Reduce heat

and simmer for 20 minutes.

 

Add okra and collard greens; simmer for an additional 20 minutes.

 

Gradually stir in soy milk. Serve garnished with a small amount of chopped

parsley.
