Pineapple Upside-Down Cake

1/3 cup canola oil or melted margarine

1 cup loosely packed brown sugar

1 20 oz can sliced pineapple (Save the juice for the

cake batter.)

1 3/4 cups liquid (a combination of the pineapple

juice from the canned pineapple slices and

soymilk is good)

1 teaspoon vanilla

1/2 cup canola oil

1 cup white sugar

2 1/2 cups unbleached white flour

2/3 cup soy protein isolate

1/2 teaspoon salt

2 teaspoons baking powder

1 teaspoon baking soda

 

Spread the 1/3 cup canola oil evenly over the bottom of a 9 x 13-inch bading

pan. Sprinkle the brown sugar over to cover. Arrange the pineapple slices in

one layer next to each other on top of the brown sugar. Set aside while you

prepare the cake batter.

In a medium mixing bowl, combine the liquid, vanilla, oil, and sugar.

Preheat the oven to 375F. Sift the flour, soy protein isolate, salt, baking

powder, and baking soda into the liquid mixture, and beat well. When smooth,

pour the cake batter evenly over the pineapple slices in the pan.

Bake for 25 to 30 minutes, or until the middle is thoroughly cooked. Insert a

tooth pick in the middle. If it comes out clean, the cake is done. Remove from

the oven and let cool for 10 minutes.

Place a serving platter or tray on top of the cake. Holding the tray and the

cake pan, flip them over so the bottom of the cake pan is on top. Put the

platter or tray down on the counter, and gently lift the cake pan off the cake,

leaving the pineapple on top. If any of the pineapple slices or topping stick

to the cake pan, slide them off with a spatula, and place them back on the cake.
