Comfy Kale Soup

1 1/2 tablespoons olive oil

3 large garlic cloves -- chopped

3 medium leeks -- sliced

1 parsnip -- chopped

1 medium red onion -- chopped

1 stalk celery -- thinly sliced

6 cups vegetable stock

1 bay leaf

1 teaspoon dried parsley

1 teaspoon dried tarragon

1/4 teaspoon white pepper

8 cups packed chopped kale

1 cup soy milk (calcium fortified)

 

In a large pot with a lid, heat oil over medium-high heat. Add garlic, leeks,

parsnip, onion, and celery; saute for 5 minutes.

Add vegetable stock, bay leaf, parsley, parsley, tarragon, white pepper, and

kale. Mix together and bring to a boil. Reduce heat, cover and simmer for 15

minutes.

Remove bay leaf--if you can find it! In batches, with a food processor or

blender, puree vegetable mixture. Return pureed soup to pot and add soy milk.

Heat and serve.
