Delicious Calcium-Rich Dairy-Free Vegetarian Recipes Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 3 cups packed chopped kale or turnip greens 2 cups packed chopped beet greens 5 1/2 cups vegetable stock 2 medium white potatoes -- peeled and chopped into small pieces 2 sweet potatoes -- peeled and chopped into small pieces 1/4 cup lemon juice 1 tablespoon soy sauce In a nonstick saucepan, heat oil over medium heat. Add kale and beet greens; saute 5 minutes. Set aside. In a large pot, bring vegetable stock to a boil. Add potatoes and simmer, covered, for 20 minutes. Transfer 3 cups of soup mixture (liquids and solids) to food processor or blender; process until smooth. Return to pot.
