Mediterranean Orzo Salad

2 medium tomatoes

4 cups cooked orzo

1/2 cup feta cheese

1/3 cup sliced black olives

2 cups spinach -- rinsed, trimmed & torn

1/4 cup red wine vinegar

 

Chop the tomatoes.

 

In a serving bowl, combine the cooled orzo with the tomatoes. Crumble the

cheese as you add it to the orzo salad. Toss the olives, spinach, and dressing

with the orzo.

 

Serve at room temperature.
