Baked Potatoes with Fajita Vegetables

2 red bell peppers

1 large red onion

1/4 cup fajita marinade

4 baked potatoes

 

Slice the peppers and onions and put them in a bowl.

 

Toss the vegetables with the fajita marinade. Let stand for 15 minutes.

 

Heat a sprayed nonstick frying pan (or use 2 tbsp. vegetable oil) over medium

heat. Saute the pepper and onions until tender, stirring occasionally.

 

Slit open each potato and squeeze out the sides until the potato pushes open.

 

Set the potato halves on a serving plate, spoon the hot vegetables over them,

and serve.
