Fettuccine with Baby Broccoli

2 bunches baby broccoli

1 1/2 9 oz packages fresh fettuccine

1/4 cup butter

2 tablespoons olive oil

4 cloves garlic -- sliced

1/2 cup dry white wine

2 tablespoons thinly sliced fresh basil leaves

3/4 cup coarsely grated Parmesan cheese

1/4 teaspoon salt

1/4 teaspoon cracked black pepper

 

Bring 2 quarts salted water to a boil in a 5-quart saucepan. Trim off and

discard a thin slice from ends of 1 bunch baby broccoli; slice diagonally into

thirds. Add to boiling water. Cook 3 minutes, transfer to colander with

slotted spatula or tongs. Set aside.

 

Add 1 1/2 packages fettuccini to same saucepan of boiling water. Return to a

boil and cook according to package directions. Drain well and transfer to a

large pasta bowl.

 

Melt 1/4 cup butter with 2 tablespoons olive oil in a medium skillet. Add 1 red

bell pepper, cut into 1-inch squares, and 4 sliced garlic cloves; sauté 2 to 3

minutes or until garlic just starts to brown. Add the baby broccoli, 1/2 cup

wine, and 2 tablespoons sliced basil; cook 1 minute. Add broccoli mixture to

bowl of pasta along with 1/2 cup cheese, 1/4 teaspoon salt and 1/4 teaspoon

pepper. Toss, top with remaining 1/4 cup cheese, and serve.

Several years ago, a California seed company crossed broccoli with Chinese kale

(Gai Lan) and produced this long, slender-stemmed cruciferous vegetable.

Although the stem somewhat resembles asparagus, the two

vegetables are not related. The small broccoli-like flowerette at the end of the

baby broccoli reveals its true heritage. Marketed as Broccolini in bunches of

about 20 stalks, baby broccoli is available year round in gourmet

markets and some supermarkets. Baby broccoli may be stored for up to 1 week in

the refrigerator crisper. To prepare this mild-flavored green vegetable, just

trim off and discard a slice from the stem end-no need to peel the stem--and

cook the whole stalk in boiling salted water or a steamer for 2 to 3 minutes.

Baby broccoli may be used in any dish that would normally include the larger

version. It is especially good cooked to crisp-tender and served as an

appetizer, or grilled for 1 to 2 minutes.
