Chocolate Cake

Amount Measure Ingredient -- Preparation Method

1/3 cup canola oil

1/2 cup water

1 cup sour soymilk or 1 cup fresh soymilk and 1

tablespoon vinegar

1 teaspoon vanilla

1 cup sugar

Dry Ingredients:

2 cups unbleached white flour

3/4 cup cocoa

1/8 cup soy protein isolate

2 teaspoons baking soda

1/2 teaspoon salt

 

Preheat the oven to 350F.

With a whisk, beat the oil, water, sour soymilk, vanilla, and sugar together

until a smooth batter is formed.

Sift the dry ingredients into the liquid mixture, and whisk together well until

all the lumps are gone. Pour into 2 greased 9-inch cake pans, and bake for 25

minutes.

VANILLA FROSTING

You can make this frosting in a food processor; it couldn't be easier

 

1 teaspoon vanilla

1/3 cup margarine

6 to 8 tablespoons soymilk

3/4 cup soy protein isolate

 

4 to 5 cups confectiooners' sugar

 

Mix all the ingredients well except the confectioners' sugar.

 

Add the sugar and mix well until you have reached a good spreading consistency.
