Sweet Vegetable Casserole

1/2 cup onions

1/2 cup corn

1/2 cup carrots

1/2 cup celery

1 cup cooked pinto or kidney beans

2 cups cooked rice or millet

pinch sea salt

 

Cut vegetables in small, uniform pieces and layer onions, corn, carrots, and

celery on the bottom of a casserole dish. Cover with pre-cooked beans, sea

salt, and leftover rice or millet. Add half an inch of water and bake for 20

minutes.
