Apple Crisp

Topping:

1/3 cup margarine

1 cup rolled oats

2/3 cup soy protein isolate

1/4 cup wheat germ

2/3 cup brown sugar

1/2 teaspoon salt

1 teaspoon vanilla

8 cups chopped apples

juice of 2 lemons (approximately 1/3 cup)

1 tablespoon cinnamon

1 teaspoon allspice

2 to 4 tablespoons unbleached white flour

1 cup brown or white sugar or a combination

 

Preheat the oven to 350F.

For the topping, cut the margarine into the oats, soy protein isolate, wheat

germ, 2/3 cup brown sugar, salt, and vanilla with a fork, and mix well.

Place the apples in a deep dish, 9-inch casserole, or baking pan. Drizzle the

lemon juice and sprinkle the cinnamon, allspice, flour, and sugar over them, and

mix it all together.

Sprinkle the topping over the apples, and cover with aluminum foil. Bake for 20

minutes. Remove the foil and bake for 10 more minutes, or until the top is

golden brown.
