Scalloped Potatoes

8 to 10 medium white potatoes -- thinly sliced

1 to 2 onions -- finely chopped

1/3 cup unbleached white flour

salt and pepper

1/3 to 1/2 cup soy margarine

 

Preheat the oven to 350F.

Oil a 9 x 13-inch pan and build layers. Start with a layer of the sliced

potatoes, then sprinkle them with the chopped onions, flour, salt, and pepper.

Dot the layer with margarine, and repeat.

For the top, spread a layer of potatoes and onions, sprinkle with salt and

pepper, and dot with margarine.

Pour the soymilk slowly into the pan until it almost covers the top layer of

potatoes. Cover with aluminum foil and bake for 30 minutes, then uncover and

bake for 30 minutes more or until the potatoes are tender.
