Guest guest Posted May 10, 2000 Report Share Posted May 10, 2000 * Exported from MasterCook * Baked Soybeans Recipe By :Tofu and Soyfoods Cookery - Peter Golbitz Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium onion -- chopped 1 small green pepper -- chopped 2 cloves garlic -- minced 1/2 tablespoon soy or olive oil 3 cups cooked soybeans 1/4 cup sorghum molasses 1/4 cup ketchup or tomato paste 1 teaspoon salt 1/2 teaspoon dry mustard Preheat the oven to 350F. Saute the onion, green pepper, and garlic in the oil. Mix with all the remaining ingredients in a 1 1/2-quart casserole dish, and bake uncovered for about 45 minutes. (If you don't have time for baking, heat thoroughly on the stovetop or in the microwave.) Variation: Add 2 soy " hot dogs " cut in chunks to the casserole mixture before baking.
