Crepes with Shiitake Filling

Filling:

2 teaspoons olive oil

1/2 cup chopped sweet pepper

1 medium onion -- chopped

5 cups chopped fresh shiitake mushrooms

2 tablespoons tamari soy sauce

Crepes:

1 2/3 cups unbleached white flour

2/3 cup nutritional yeast flakes

1/2 cup soy protein isolate

1/2 teaspoon salt

2 3/4 cups water

1/2 cup soy milk

 

In a large skillet, saute the filling ingredients for 10 to 15 minutes until all

the liquid is absorbed. Keep covered to keep warm.

In a medium mixing bowl, whisk together all the crepe ingredients, except the

oil for cooking, until a smooth batter is formed. Heat a cast-iron skillet over

medium heat, and squirt a scant 1/4 teaspoon of the oil on the pan just before

you're ready to cook your crepe. With a soup ladle, pour 1/3 cup of batter

around on the pan, and tilt the pan so an even 8-inch round crepe is formed.

Cook until light brown on each side, and remove to a plate. Cover the crepes

with a towel to keep them soft. Repeat the procedure until all the crepes are

made. It takes less time if you use 2 pans to cook the crepes.

Spoon about 1/2 cup of the filling down the middle of each crepe, and roll them

up tight. Place them on a serving platter, and serve hot. These are good

served with fresh salsa.
