Guest guest Posted May 10, 2000 Report Share Posted May 10, 2000 I haven't tried either of these, but they look yummy: Blueberry Lemon Cake Brown Rice Treat * Exported from MasterCook * Blueberry Lemon Cake Recipe By : www.nasoya.com 10/99 Serving Size : 1 Preparation Time :0:00 Categories : Desserts Fruits Soyfoods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***BLEND TOGETHER IN A FOOD PROCESSOR*** 1/2 pound Nasoya soft tofu 3/4 cup water 1/2 cup fresh lemon juice 1/2 cup oil ***MIX TOGETHER IN A BOWL*** 2 1/2 cups unbleached white flour 1 1/4 cups sugar 1 1/2 teaspoons baking soda 1/2 teaspoon salt 1 cup blueberries -- fresh or frozen ***LEMON GLAZE*** 1 1/2 cups confectioners' sugar 2 tablespoons fresh lemon juice Pour over the top of the cooled cake. Preheat oven to 350 degrees F. Pour flour mixture into the food processor and pulse just until blended. Gently fold in: 1 cup blueberries, fresh or frozen Pour into an oiled tube or bundt pan and bake about 45 to 50 minutes. Let the cake cool about 10 minutes, then turn it out of the pan onto a rack. When the cake is cooled, move onto a serving platter and glaze with Lemon Glaze, below. Lemon Glaze Mix together: 1 1/2 cups confectioners' sugar 2 Tbs. fresh lemon juice Pour over the top of the cooled cake. Mix all ingredients together in saucepan, place over medium heat until simmering.
