I haven't tried either of these, but they look yummy:

Blueberry Lemon Cake

Amount Measure Ingredient -- Preparation Method

***BLEND TOGETHER IN A FOOD PROCESSOR***

1/2 pound Nasoya soft tofu

3/4 cup water

1/2 cup fresh lemon juice

1/2 cup oil

***MIX TOGETHER IN A BOWL***

2 1/2 cups unbleached white flour

1 1/4 cups sugar

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 cup blueberries -- fresh or frozen

***LEMON GLAZE***

1 1/2 cups confectioners' sugar

2 tablespoons fresh lemon juice

 

Pour over the top of the cooled cake.

 

Preheat oven to 350 degrees F.

 

Pour flour mixture into the food processor and pulse just until

blended. Gently fold in:

 

1 cup blueberries, fresh or frozen

 

Pour into an oiled tube or bundt pan and bake about 45 to 50 minutes. Let

the cake cool about 10 minutes, then turn it out of the pan onto a

rack. When the cake is cooled, move onto a serving platter and glaze with

Lemon Glaze, below.

 

Lemon Glaze

 

Mix together:

 

1 1/2 cups confectioners' sugar 2 Tbs. fresh lemon juice

 

Pour over the top of the cooled cake.

Amount Measure Ingredient -- Preparation Method

1 1/4 cups regular Silk soy milk

3/4 cup instant brown rice

1/4 cup golden raisins

1 teaspoon cinnamon

1 teaspoon nutmeg

1 tablespoon ground cloves

 

Serves 2

 

This healthy rice dish makes a simple, guilt-free dessert.

 

Mix all ingredients together in saucepan, place over medium heat until

simmering. Reduce heat to low and cover for approximately 10 minutes or

until liquid is absorbed.
