IF this works, just ignore the *nothing*, I'm hoping that since MC doesn't seem

to have a problem when only the word *OR* appears in a line, it'll find nothing

acceptable. Judy

Hawaiian Kebabs

1 pineapple

OR

1 14 oz can pineapple chunks in juice

Hawaiian Sauce

1/2 cup vegetable stock or pineapple juice

2 tablespoons tamari soy sauce

2 tablespoons lemon juice

1 teaspoon dark sesame oil

1 teaspoon honey (omit if using pineapple juice)

1 inch ginger root -- chopped

1 tablespoon arrowroot

1/2 pound tempeh -- steamed for 15 minutes and cooled

1 onion -- cut in large chunks

1 large green pepper -- cut in 1-inch squares

1 sweet red pepper -- cut in 1-inch squares

skewers*

1 tablespoon oil

 

Cut the fresh pineapple into 1-inch chunks, or drain the canned pineapple,

saving the juice.

In a saucepan, combine the stock. tamari, lemon juice, oil, honey (if using),

gingerroot, and arrowroot. Simmer the sauce a few minutes until thick and

shiny.

Cut the steamed tempeh into thin 1-inch squares. Add to the sauce mixture,

cover, and simmer for 5 minutes. Cool.

If desired, steam the onion and pepper for 1 minute to soften, then cool.

Thread the skewers, alternating squares of tempeh, peppers, onions, and

pineapple. If red peppers are not available, use cherry tomatoes for color.

Brush the kebabs lightly with the oil.

Place the kebabs on a grill, and cook about 5 minutes on each side, or place in

a broiling pan, and cook about 5 inches from the source of the heat, turning

once and brushing with any leftover marinade.

*if using bamboo skewers, soak them for 30 minutes in cold water to prevent

burning.
