Emergency Mexican Tomato Sauce

1/2 small onion -- chopped

1 clove garlic -- chopped

2 teaspoons minced hot chili pepper

OR 1/4 tsp. cayenne pepper

1 tablespoon oil

1 tablespoon chili powder

3 cups tomato juice

OR tomato puree

 

Saute onion, garlic, and hot pepper in oil for about 3 minutes until they just

begin to color. Add chili powder (or cayenne if you're using that instead) and

cook briefly. Stir in tomato juice or puree and simmer, uncovered, for 5-10

minutes, until sauce is slightly thickened.
