Chinese Sweet & Sour Balls

Amount Measure Ingredient -- Preparation Method

1 tablespoon peanut butter

1 tablespoon tamari soy sauce

1 pound firm tofu

1/2 cup whole wheat flour

1/2 cup finely chopped green peppers

1/4 cup sliced fresh mushrooms

1/4 cup sliced fresh water chestnuts or celery

4 green onions -- thinly sliced

Sweet and Sour Sauce

1 cup unsweetened pineapple juice

6 tablespoons sweetener of your choice

6 tablespoons apple cider vinegar

2 tablespoons tamari soy sauce

1 1/2 tablespoons arrowroot or cornstarch

1/4 teaspoon garlic powder

 

Preheat the oven to 350F.

Whip together the peanut butter and tamari.

Mash the tofu in a bowl, and mix in the flour, peanut butter mixture, green

pepper, mushrooms, water chestnuts, and green onions.

Form into sixteen 1 1/2-inch balls, and arrane in an 8 x 8-inch pan spread with

1 tablespoon oil. Bake 20 mimutes, then carefully turn each one over, and bake

20 minutes more. Serve on rice with Sweet and Sour Sauce.

Sweet and Sour Sauce - Combine all the ingredients in a saucepan, whisking out

all lumps. Bring to a boil over medium-low heat, stirring constantly until

thickened.
